I decided to name this post as the ones with the friends as I feel like everyone in this class has started to become good friends with each other. A lot of the class time is spent laughing and learning about all of our different cultures and baking experiences. It is definitely getting bitter sweet knowing there are only 2 weeks left of class. Hopefully we can all visit each others bakeries and restaurants one day!
Today we worked on making entremets which are layered desserts with multiple cake layers and mousse layers. Entremets are usually finished with mirror glaze of a velvet spray both of which we will work on tomorrow. Today we created a vanilla mousse with an almond feuilletine layer and a vanilla sponge entremet. We also created a mango passion fruit mousse with a vanilla sponge and a dried mango feuilletine layer.


We layered the cake with the mousse and feuilletine layers in a metal ring and then quickly froze it to set. We then used the heat gun to get it out of the mold in a clean swift motion. Using a disk mold we filled with some more mousse and placed the layered cake in the mold and filled with more mousse. This will then set in the freezer overnight and will be finished tomorrow.
We repeated this with the mango passion fruit entremet, each one will be finished differently. We also used up some of the extra mousse and extra raspberry apple inserts from last week to make mini entremets/whipped desserts. These will be mirror glazed tomorrow to give everyone a chance to glaze a dessert. We also worked on some chocolate at the end of the day, starting the process of hopefully making a big ribbon style bow on the bigger entremet. Damien did this with some white chocolate, acetate, and a multiwheel cutter.


Tomorrow we will finish all of the entremets and chocolate work, closing out week three. Next week will be busy with viennoiserie and modern tarts with a guest chef starting off the week. Only a few more lessons left before its back to the states, feeling a little homesick for some chick-fil-a but I shall push through!
